Grilled Chicken and Pineapple Teriyaki Salad Wrap via Foodness Gracious

I don’t think I could come up with an accurate number of salad wraps I’ve made in my life. From restaurant jobs as a teenager and now to my kids lunches, I must have made a good amount. That’s why It’s getting more difficult to come up with new fillings but I always seem to get  inspiration from the strangest places. For example, the idea for this Grilled Chicken and Pineapple Teriyaki Wrap came to me when I was trying to find flights to Hawaii! Fortunately the wrap was much less expensive than a flight to Maui. I used Flatout’s Light Wrap for this easy classic island lunch and incorporated the flavors of grilled pineapple and teriyaki into it. Another change I made from my usual green leaf salad filling was to use watercress. If you haven’t used it yet pick it up next time you see it in the store. It has a peppery taste to it and moisture than regular salad. It always makes me feel super-healthy when I eat it because it usually comes with the root still attached for freshness. Staying on the healthy track was easy with the Flatout Light wrap because each one has half the calories of a regular flatbread, is low carb and high in fiber! This might be one of my favorite wraps yet, the sweet flavor of the pineapple and the grilled chicken taste so good together. Finish the wrap with a drizzle of your favorite teriyaki salad dressing.

Ingredients:

2 Flatout Light Wraps

1 medium sized chicken breast

Salt and black pepper

1 tablespoon olive oil

1/2 fresh pineapple sliced into flat wedges

1 bunch watercress with the stalks chopped off

2 small radish, sliced thinly

1 ripe avocado peeled and sliced

Teriyaki salad dressing

Method:

Preheat your grill to high

Season the chicken with salt and pepper

Drizzle the olive oil over the pineapple wedges

Place the chicken on one side of the grill along with the pineapple on the other side

Grill the chicken until golden in color and no longer pink in the middle

Sear the pineapple until you see some nice dark grill marks on the skin and the edges start to caramelize

Once both items are cooked, transfer to a plate and let rest, chop the chicken into strips

Lay both Flatout Wraps out on your work surface

Place a bunch of watercress leaves on each wrap followed by some strips of chicken and pineapple

Add some avocado slices tucked under the watercress

Place some radish slices on top

Drizzle some of the teriyaki dressing over the filling

Fold the wrap inwards to form a cone shape, this will leave you with one end open and one closed, easy to eat!
