Healthy Back-to-School Lunch Options: Toasted Cuban FOLDit

Ah, teens, they are so predictable…NOT! This week my “co-host” is my 16 year old son, Ryan. In real life he is a musician, enjoys acting and participates in several sports. He has a vibrant personality and is always a buzz with energy. In this segment, however, he seems to have chosen to play the silent type. Why he can’t pull that one off when I’m working, watching a movie or TRYING TO SLEEP is a mystery.

Back to School Lunch Menu Day 15

Toasted Cuban FOLDit

  • 2 slices Ham
  • 2 slices Turkey
  • 1 tsp Spicy mustard
  • 1 slice Swiss cheese
  • Dill pickle slices
  • Flatout FOLDits

Diced Chicken Bites

  • Boneless skinless chicken (we use left overs!)

Mango Salsa

  • 1 ripe Mango (diced)
  • 1/4 cup Cilantro (minced)
  • 1/4 cup Red onion (diced)
  • Honey (to taste)
  • Jalapeno (to taste)

Spiced Nut Mix

  • 2-3 cups any mixed nuts
  • 1 tbsp taco seasoning mix

The theme of this week’s apron from Childs Play Design (a mom run Etsy shop I’m passionate about) is music and parties. What you can’t see are the cool martinis in the pattern, which I wish I could have consumed after making this video! At the end of this series I’m SO PROUD to be doing with Flatout, I’ll be giving away an apron from the Childs Play line!

    I am a visual person so seeing this prepared and you both having fun, makes it easier for me. Maybe I’ll get my son to help me? who knows.

    You weren’t kidding when you said Ryan didn’t say a word the whole clip! Ryan-very cool that you helped your mom out with this. I can’t wait to try the fold overs, sometimes you just don’t want to roll your sandwich.

    Yummy! Love the spices & great idea to use tace seasoning for a great snack mix. Again, yummy!
