Healthy Holiday Recipes: Trio of Sliders Party

Good morning and happy Monday!

As we mentioned last week, we are celebrating the fast approaching holiday season by showcasing recipes, decorating and entertaining tips from women who are working to make their holiday seasons as happy and healthy as possible. We’ll be featuring a new video and menu each weekday for the next three weeks, and will be compiling a full weekly menu and shopping list for you every Friday.

This week’s topic: healthy holiday recipes!

Today’s recipes come from Laura Sampson, who blogs at Hey What’s For Dinner Mom? Laura, her three sons and her husband Jack attempt to grow as much of their own food as possible on their Micro-Farm in Alaska. Given that the vegetable and fruit-growing season is only 90 days long, this can be quite a humorous undertaking at times. They also forage, hunt, fish and raise meat and egg birds to feed their family. They put their harvest up for winter use by canning, freezing, drying, smoking, curing and cold storing as much as they can.

Laura is an accomplished Alaska Master Gardener, has been in the soil since she was old enough to crawl, and raises all their food, meat, vegetables and fruit organically. She also loves to read, sew, knit, cross country ski, bike and hike. Most importantly, she recognizes that “the days of motherhood are long but the years are short” and adjusts her attitude accordingly. We’re so excited to welcome her to the Flatout Healthy Holidays team!

This party plan is so simple and, best of all, you can make the recipes the day before your party, making party prep a breeze. Your guest will love to create their own sliders from the buffet line, and with two meat and one vegetarian option you’ll definitely have something for everyone. Happy entertaining from my house to yours!


Trio of Sliders Party Recipes

#1: Veggie Joes Sliders

  • 2 TBSP cooking oil
  • 1 medium onion
  • 1 clove garlic, smashed, peeled and chopped
  • 2 cups green lentils
  • 4 cups water
  • 1 8 ounce can tomato paste
  • 1-3 teaspoons liquid smoke, depending on taste
  • 2 TBSP honey
  • 2 teaspoons salt –more or less to taste
  • 1 teaspoon mustard

Heat the oil in a medium Dutch oven over medium-high heat.Coarsely chop the onion and add to the pot. Cook for a minute then add the garlic, stir for 30 seconds, then add the lentils and cook and stir for 2 minutes. Add water, bring to a boil, reduce heat, cover and simmer for 10-15 minutes. After simmering, add the rest of the ingredients and cook for another 15 minutes. Add more water if necessary to keep the the lentils from becoming too dry.

After 15 minutes, taste and adjust salt and smoke flavors if needed. Refrigerate overnight. Reheat the Veggie Joes before the party and set up as a serve yourself buffet with Flatout HungryGirl Foldit Sliders in Classic White and the other two slider makings.

#2: Taco Bite Sliders

Taco Bite Toppings 

  • Lettuce
  • Tomatoes
  • Plain yogurt or sour cream
  • Shredded cheese
  • 2 jalapeños


Brown the ground meat in a good sized skillet over medium-high heat. When it’s done cooking, drain off any fat, then add 1/2 cup of good salsa, ground cumin, water, tomato paste and the black beans. Simmer, stirring occasionally, for 10-15 minutes. Refrigerate overnight.

Before the party, chop or grate the Taco Bite Toppings as necessary. Use the remaining salsa as a topping. Reheat the Taco Bite Filling and set up as a serve yourself buffet with Flatout HungryGirl Foldit Sliders in Classic White and the other two slider makings.

#3: Hot Wing Sliders with Blue Cheese Celery Coleslaw

Preheat the oven to 350 degrees. Bake the chicken breasts until cooked through. Drain off any juices. Then, using kitchen shears, chop the chicken into bite-sized pieces right in the baking dish. Pour the Franks Hot Wing sauce over chicken and dot with the butter. Bake another 1/2 hour, stirring once. Let the chicken cool and then refrigerate overnight.

Reheat the Hot Wing Sliders meat and set up as a serve yourself buffet with the coleslaw, Flatout HungryGirl Foldit Sliders in Classic White and the other two slider makings. Let your guests have fun with it!

Blue Cheese Celery Coleslaw

  • 1/2 head of green cabbage
  • 4 stalks of celery
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 teaspoon of sugar
  • 2 teaspoons of vinegar
  • 4 ounces good blue cheese
  • 1 teaspoon salt


Slice the cabbage very thinly, removing the core as you go. Chop it cross wise to make sure it will fit on the sliders. Place in mixing bowl. Slice the celery thinly on the diagonal. Mix in with the cabbage. In another smaller mixing bowl combine the remaining ingredients together and mix well. Pour the dressing ingredients over the cabbage mixture and toss together. Refrigerate overnight for best flavor.

    I can’t even watch this! I know every word by heart 🙂 For my money the hot wing sliders are the best and the blue cheese coleslaw is great not on a slider too!

    I can’t wait to see what everyone else does!
