Healthy Holiday Recipes: Flatout Easy Holiday Buffet

Having four kids (ages 18, 12, 6 and 5) hasn’t slowed this mom down one bit. Lara DiPaola – aka DiPaola Momma – works hard to make time for it all. From writing her personal blog, Chicken Nuggets of Wisdom, to professional writing, while also holding down a job as the Director of Marketing and Creative Development for the awarded Beltway area (and beyond) daily deal site, Certifikid. She is the self-proclaimed CNIC, “Chief Nugget In Charge.”

In a previous life, Lara owned her own catering and party planning business and regularly puts those skills to work on everything from over-the-top themed birthday extravaganzas to events for Momz Share, the networking group that she founded with Jennifer Gerlock of Hip As I Wanna Be (who will be on Flatout Fresh tomorrow!), which they totally dig running with the third member of the band, Sunday Stilwell of Adventures In Extreme Parenthood. She also finds sleep highly overrated and considers coffee one of the food groups.

This year Lara wanted to do something that was quick and easy, allowing for more time with her guests, but would still produce that WOW factor that everyone is used to with her holiday entertaining. She started with something sweet – because you should always start with dessert, right? Then she moved onto the savory recipes, with something for adults and kids alike! The end result is worthy of an entire (easy) holiday buffet!

Flatout Easy Holiday Buffet

Flatout “Biscotti”

Directions:

Preheat oven to 350 degrees. Cut each Flatout wrap into 1 to 2 inch wide strips. Bake on a lined cookie sheet for approximately 4 to 6 minutes (or until golden brown and crisp). Meanwhile, melt chocolate in a double boiler or in the microwave on medium at 10 second intervals. Do not over cook! Add a small amount of melted chocolate to the room temperature cream to temper it, then combine cream into the rest of the melted chocolate. Drizzle chocolate over the Flatout and sprinkle with toffee bits. Allow the “biscotti” to set before serving. Bon appetit!

Wine Poached Fig and Goat Cheese Tartlets

Directions:

Preheat oven to 350 degrees. Cut the Foldit sliders in half. Bake sliders on a lined cookie sheet until crisp, approximately 5 minutes. Meanwhile, over medium heat stir the sugar into the wine until sugar dissolves and mixture begins to bubble slightly. Add figs and simmer until plump. Remove figs from the pan once plump, approximately five minutes. Set aside. Increase heat until wine mixture begins to bubble and reduce wine by 1/4 or until slightly thickened to create a reduction sauce. Watch carefully so it doesn’t burn!

Spread goat cheese onto crisp sliders. Cut figs into halves. Place one half fig on each tartlet, spreading it open slightly to cover cheese. Top with toasted walnuts and drizzle with wine reduction. ENJOY!

Couscous Salad

  • 1 cup chicken stock
  • 1/2 cup jumbo mixed raisins (dried cranberries, cherries and/or blueberries work wonderfully too!)
  • 1 cup instant couscous, uncooked
  • Zest from an orange

Directions:

Combine chicken stock and raisins in a sauce pot and bring mixture to a boil. The raisins will become plump and juicy. Remove the mixture from heat and add in couscous. Allow couscous to soak in the flavors and cook itself in the broth. Once the liquid has been soaked up, fluff the cooked couscous with a fork. Serve the couscous up on a holiday platter or bowl. Top with orange zest.

Falafel and Crab Cake Sliders

Directions:

Flatten falafel and crab cakes to ensure they fit nicely inside the sliders. Create combinations of falafel and hummus sliders with crab cakes and tartar sauce. These mini sandwiches will go great with your couscous! Bon appetit!
