Kid-Friendly Tuna Salad Wraps

Back to school for the little ones? Here’s a great idea for a packed lunch that’s quick, tasty, and fun. We make tuna salad extra healthy with avocado mayonnaise, dried fruit, and quinoa, and roll it up into something smaller hands can eat with a minimum of mess. Flatbread makes it easy. Your kids will love their lunch, promise!

Kid-Friendly Tuna Salad Wraps

Ingredients

  • 10 ounces of Albacore Wild Tuna
  • 1/4 cup diced peaches
  • 1/4 cup diced dried cherries
  • 1/4 cup cooked quinoa
  • 1/3 cup avocado oil mayo
  • 1 teaspoon honey
  • salt and pepper to taste
  • 1 cup diced purple (red) cabbage
  • 1 tablespoon cream cheese (optional)
  • 3 – 4 Flatout light flatbread wraps

Directions

In a large mixing bowl, mash (flake) the tuna with a fork. Then, add in the peaches, dried cherries, quinoa, mayo and honey. Stir until thoroughly combined. Sprinkle a little salt and pepper to taste.
To assemble your wraps, put 1/2 – 3/4 cup of the tuna salad on one end of the wrap. Flatten with a spoon. Put the red cabbage in a strip across the middle of the wrap. Then, spread a little cream cheese at the far end of the wrap. Starting with the tuna end, roll it up. Then, cut in half.

To assemble the lunchbox:
Include 1 tuna salad wrap, 1/4 cup fresh blueberries, 8 -10 golden grape tomatoes, and a handful of chile lime mango bean crisps.
