There are days where we need a little extra “oomph” in our lives. Mondays, for example. Or the first day back after an indulgent vacation. Or a gray day with no end (or nap) in sight. We all have those every once in awhile, am I right? Oftentimes, that oomph takes the form of chocolate, a tried and true remedy. Chocolate is medicinal, it’s just the right mood and energy booster for those slow days and long afternoons when your energy might be low and sluggish. Rest assured, Dr. Chocolate is in!
This recipe also makes an ideal breakfast because it has some oomph but not so much that it feels wrong to eat so early in the morning. It’s balanced. There’s banana, a delicious nut butter, and a few sprinkles of the things that make it special: some cayenne, cinnamon, and a pinch of flaky sea salt take this quick grilled flatbread sandwich out of the lunchbox and into cute-little-coffeeshop-with-expensive-snacks territory.
But wait! You don’t have to spend a lot of money on this sandwich. Just heat up the panini press, slice up a banana, and grab a flatbread. You’re already more than halfway there. Then wrap it up in parchment, slip it into your pocket, and wait for the perfect moment to raise it to your lips. Either right this minute, or maybe about 10:30am. Or 3:00 pm. Enjoy it with a beautiful cup of Earl Grey tea, because why not? The more oomph, the better. Your doctor told you!

Sweet, Savory, and Spicy Banana Foldit
- 1 Flatout Foldit flatbread
- 1 tablespoon almond or other nut butter
- 1/4 banana, sliced
- 1 tablespoon chocolate chips
- pinch ground cinnamon
- pinch cayenne pepper
- pinch flaky sea salt
Preheat panini press. Assemble flatbread sandwich: almond butter spread on one half of the flatbread, then topped with chocolate chips, then banana slices, then sprinkle on the cayenne pepper and cinnamon. Fold the flatbread in half, then cook in panini press until crispy and toasted.
